Founded in 2018, Fuego was born from a simple yet profound desire: to elevate the rustic tradition of open-fire grilling to the highest echelons of fine dining. Our founder, Chef Mateo Rodriguez, spent over a decade traveling through the Basque country, Argentina, and Texas, studying the nuanced interactions between fire, smoke, and meat.

Great BBQ starts long before the meat hits the grill. We feature a state-of-the-art dry-aging chamber where our prime cuts rest for anywhere from 30 to 120 days.
